The Middleby Marshall PS638EV-CAV is the cavity-only configuration of the PS638EV WOW Electric Ventless Conveyor Oven, supplied without a stand. Designed for high-volume commercial kitchens, it uses Impingement PLUS technology combined with a low oven profile and dual air return to bake up to 30% faster than traditional conveyor ovens, delivering consistent, hands-free results across every product passing through.
The PS638EV-CAV draws 22 kW and features a patented Energy Management System (EMS) alongside an advanced air delivery system that keeps external surface temperatures below 49°C thanks to the Cool Skin safety feature. Removable drip trays, crumb trays, end panels, air fingers and the conveyor belt make routine cleaning straightforward, while the stackable design allows two units to be run together for increased throughput without expanding the kitchen footprint.
