The Turbofan P85M8 is a full-size electric prover and holding cabinet designed to integrate seamlessly with the Turbofan E35 convection oven range, forming a high-performance baking centre. Accommodating 8 trays of 406mm x 736mm (16" x 29") per unit, the double-stacked configuration delivers a combined 16-tray capacity while maintaining a compact 910mm-wide footprint, making it well suited to busy bakeries, restaurants, and catering kitchens with limited floor space.

Operating as both a dough prover and a hot holding cabinet, the P85M8 covers a proving temperature range of 20-40°C for accurate yeast activation with fresh or frozen dough, and switches to a hot holding range of 65-85°C to keep cooked food at safe serving temperatures. A low-velocity circulation fan, mechanical thermostat, humidity level control, and auto water fill system work together to deliver consistent, reliable results with straightforward manual operation. An optional 457mm x 762mm (18" x 30") tray rack set and integrated water filter kit are available as accessories.
