The busiest hour is a more useful starting point for dishwasher selection than the total number of meals served in a day. The aim is to estimate the racks arriving at the wash area, then check whether the whole station can process them without a growing backlog.
Count the items that actually return
During a representative busy service, count plates, bowls, cups and utensils separately. Note when they arrive. A function venue may receive most plates in a short clearing period, whereas a café may have a more continuous flow. Record that pattern rather than averaging it across opening hours.
Include items washed more than once during service, and keep pots or awkward utensils separate if they need a different process. Guest count alone misses this detail.
Convert items into practical rack loads
Use the racks and crockery you intend to buy. Count how many items fit in a normal, correctly loaded rack without crowding. Different plate sizes and shapes change this number. Manufacturer sizing guidance, such as Winterhalter’s examples, also treats racks and the ware being washed as part of the selection process.
As an illustrative calculation, 240 plates divided by 16 plates per properly loaded rack equals 15 plate racks. If another six racks are needed for cups and bowls, the planned return is 21 racks. Those numbers are an example, not a machine recommendation or an Atlantic customer result.
Separate cycle time from station output
A machine’s stated cycle time does not include every action at the station. Someone still needs to sort items, prepare racks, load, unload and move clean ware away. Check the selected model’s performance information, available cycles and site service requirements rather than deriving a purchase decision from one headline number.
Time the existing process if you have one. Where does the queue form: dirty landing, pre-rinse, machine, unloading or clean storage? Buying a faster dishwasher will not create missing bench space.
Test the peak, not just the average
Write a simple service timeline in fifteen-minute blocks. Record incoming rack equivalents and the number the team can realistically finish in each block. A growing queue reveals a mismatch even if the daily total looks modest. Repeat the exercise for your busiest recurring service, not an exceptional event that happens once a year unless that event is central to the business.
What to send with a quote request
Supply the peak timeline, rack dimensions, largest plate diameter, item mix and a sketch of the wash area. Include available electrical supply, water and drainage information for the installer to confirm. Ask the supplier to explain the proposed machine and rack arrangement against that brief.
