What temperature should a bain marie hold food at?
Under Australian food safety standards, hot food must be held at 60°C or above at all times. Commercial bain maries use a water bath or dry heat element to maintain GN pan temperatures within this safe range. Most commercial units have adjustable thermostats — always verify the holding temperature with a probe thermometer during service, particularly for dense foods like soups, casseroles, and pasta sauces.
