Stainless Steel Benches and Storage: A Buyer's Guide

Steel grade, bench height and shelving load ratings decide whether your stainless steel fitout lasts ten years or two. A practical guide to benches, sinks, shelving and trolleys for Australian commercial kitchens.

The two specifications that matter most when buying stainless steel for a commercial kitchen are the steel grade and the thickness. Grade 304 resists corrosion from salt, acid and constant sanitiser far better than the cheaper grade 430, and a thicker top resists denting. Everything else — bench height, splashback, undershelf, castors — follows from how the piece will actually be used.

1. Grade 304 or grade 430

Not all stainless steel is the same, and the difference shows up within a year or two in a working kitchen.

Grade 304 contains nickel, which is what gives it the corrosion resistance. Grade 430 does not, which is why it costs less and why it will pit and stain where 304 will not. In a wet, salty kitchen the cheaper option often ends up being the more expensive one.

"Stainless steel" on a listing is not a specification. Ask which grade the food-contact surfaces are, and what thickness the top is. A reputable supplier will tell you without hesitation.

2. Thickness and bracing decide how long it stays flat

A thin bench top with poor bracing will bow in the middle within months of taking real weight. Look for a top thick enough not to flex, a folded or channelled edge for rigidity, and cross bracing between the legs.

3. Get the height and depth right for the task

Bench height changes how tired your team is at the end of a shift. A standard work bench height suits general prep for most people. Lower it for tasks needing downward force, such as rolling dough or portioning; raise it for detailed work done standing straight, such as plating or decorating.

Depth matters just as much. A deep bench gives room to work but wastes floor space in a narrow kitchen and puts things out of reach against a wall. Measure your walkways first: aisles that are too tight are the most common and most expensive fitout mistake.

A bench against a wall almost always wants an upstand or splashback, because the gap between bench and wall is where grease and food collect and where cleaning cloths cannot reach. A bench in the middle of the room wants no upstand at all, so staff can work from both sides. Fixing this after delivery is not possible.

4. Undershelves, cabinets and drawers

Open undershelves are cheap, easy to clean and keep everything visible. Enclosed cabinets keep dust off and look tidier but need cleaning inside and can hide problems. Drawers suit small items and utensils that would otherwise clutter a bench.

5. Shelving and racking: check the load rating

Shelving is where kitchens quietly overload equipment. Every shelf has a rated capacity per level, and stacked tinned goods or full gastronorm pans get heavy fast.

Work out what will actually go on each shelf before you buy, and check the rating per level rather than the total for the unit. 6. Sinks and the plumbing detail

Choose sink bowl size around your largest item, not your average one. A pot that does not fit in the sink becomes a daily problem that no amount of good intention fixes.

7. Cleaning stainless steel properly

Stainless steel resists corrosion because of a thin passive layer on its surface. Damage that layer and the steel underneath will rust.

Clean with warm water, a mild detergent and a soft cloth, always working in the direction of the grain. Avoid steel wool, abrasive pads and chlorine bleach left sitting on the surface — those are what cause the rust spots people blame on "cheap steel".
