What temperature should a heated display cabinet operate at to comply with Australian food safety requirements?
Under Australian Standard 3.2.2 (Food Safety Practices and General Requirements), potentially hazardous hot food must be held at 60°C or above. Most commercial heated display cabinets are capable of maintaining this temperature, but you should verify the unit reaches and holds 60°C throughout the display area — not just at the thermostat location.
