Built for high-volume production kitchens, the CXEBD20.10 integrates a comprehensive suite of climate, quality, and production management tools. Climate control is delivered through Crisp&Tasty (five settings for moisture removal), BakePro (five traditional baking levels), HumidityPro (five humidity settings), and a fan with five selectable speed settings. Quality management includes Airflow Management, BakePro, and a multi-point core temperature probe, while production management covers 99 multi-step cooking profiles (up to nine steps each), HACCP data storage, a regenerating function, and preheat and cool-down functions. The fully automated ConvoClean cleaning system with optional single-dose detergent dispensing, an integrated recoil hand shower, HygieniCare antibacterial surfaces, hygienic handles, and a USB port in the control panel round out the feature set.
