The Convotherm CXEBT20.20D is a floor-standing electric combi-steamer designed for high-volume commercial kitchens and catering operations, accepting 40 x 1/1 GN or 20 x 2/1 GN trays at a 68mm shelf pitch. A dedicated high-performance boiler positioned outside the cooking chamber supplies precise, consistent steam across all three cooking modes: steam (30–130°C with guaranteed saturation), combi-steam (30–250°C with automatic moisture control), and convection (30–250°C with optimised heat transfer). The Natural Smart Climate (ACS+) system continuously manages the internal atmosphere to deliver repeatable results across every tray position.

Operators interact with the unit through a capacitive 10-inch TFT HiRes easyTouch glass touchscreen, which provides access to an integrated cookbook organised into seven categories, a one-touch automatic cooking function holding as many as 399 stored profiles, and a full suite of production tools including TrayTimer, TrayView, Delta-T cooking, Cook&Hold, Regenerate+, and HACCP data logging. The ConvoClean+ fully automated cleaning system supports eco, regular and express wash cycles with optional single-dose chemical dispensing, while HygieniCare antibacterial surfaces and hygienic handles uphold rigorous food-safety standards.
