The Convotherm CXGBD10.20 is a high-capacity gas combi-steamer oven designed for demanding commercial kitchen environments. Accommodating 22 x 1/1 GN or 11 x 2/1 GN trays at a 68mm shelf pitch, it uses an external high-performance boiler to generate steam independently of the cooking chamber, delivering precise humidity control across three core cooking modes: Steam (30–130°C with guaranteed steam saturation), Combi-steam (30–250°C with automatic humidity adjustment), and Convection (30–250°C with optimised heat transfer). Made in Germany from stainless steel, it runs on natural gas or LPG with a 45 kW rating.
The CXGBD10.20 is built around Convotherm's Advanced Closed System Plus (ACS+), combining intelligent climate, quality, and production management tools with fully automated cleaning via ConvoClean. The easyTouch 10-inch TFT capacitive touchscreen and TriColour indicator ring simplify operation across a busy service, while connectivity via WiFi, Ethernet/LAN, and an integrated USB port supports HACCP data storage and remote management. Up to 399 cooking profiles and an integrated cookbook with seven categories allow consistent results across every shift.
