The Convotherm CXGBT20.10D is a gas-fired combi-steamer accommodating 20 x 1/1 GN trays, engineered around a high-performance external boiler that keeps steam generation entirely separate from the cooking chamber. This configuration guarantees consistent steam saturation and prevents flavour cross-contamination between loads, making it well suited to high-volume production kitchens. Operators interact with the unit through an easyTouch 10-inch TFT high-resolution capacitive glass touchscreen, which provides access to the Natural Smart Climate (ACS+) system and its three core cooking modes spanning 30 to 250°C.
Bringing together climate, quality, production, cleaning and hygiene management in a single platform, the CXGBT20.10D stores up to 399 cooking profiles and logs HACCP data automatically. The ConvoClean+ programme handles cleaning without manual intervention, while HygieniCare antibacterial surfaces and hygienic handles support ongoing food safety compliance. A disappearing door removes the hazard and inconvenience of door swing in confined kitchen spaces, and built-in WiFi, Ethernet (LAN) and USB connectivity allow the oven to integrate directly with kitchen management and compliance systems.
