The Convotherm CXGBT20.20D is a heavy-duty gas combi-steamer designed for high-volume commercial kitchens, accommodating 40 x 1/1 GN trays or 20 x 2/1 GN trays at a 68mm shelf pitch. Steam is produced by a high-performance boiler housed outside the cooking chamber, ensuring precise and consistent saturation across all three core cooking modes: Steam (30–130°C with guaranteed saturation), Combi-steam (30–250°C with automatic moisture control), and Convection (30–250°C with optimised heat transfer). The unit runs on gas at 230 MJ and requires a single-phase electrical supply of 230–240V, 50/60Hz, wired as one active conductor, a neutral, and an earth.
Operation is handled through a 10-inch capacitive TFT HiRes easyTouch glass display, integrating Convotherm's Natural Smart Climate (ACS+) technology with a comprehensive set of climate, quality, and production management tools. A library of up to 399 Press&Go cooking profiles, an onboard cookbook spanning 7 recipe categories, fully automated ConvoClean+ cleaning, and HACCP data storage combine to streamline kitchen workflow, maintain food quality, and support compliance in the most demanding foodservice environments.
