Part of the Convotherm maxx pro range and assembled in Germany, the CXGBT6.10D is a seven-tray gas combi-steamer built for high-volume commercial kitchens. Steam is generated by a dedicated external high-performance gas-fired boiler located outside the cooking chamber, guaranteeing consistent steam saturation across steaming, combi-steaming, convection, baking, roasting, regeneration and low-temperature cooking. Operation is handled through a capacitive glass touchscreen — a 10-inch TFT HiRes display with scroll function and pictogram-based, smartphone-style navigation — that shortens staff training and simplifies day-to-day use.
The oven runs on Convotherm's Natural Smart Climate (ACS+) closed cooking system, which combines intelligent humidity management and precise fan control to standardise food quality across mixed loads while cutting energy and water use by up to 10% over previous-generation models. A right-hinged disappearing door retracts fully out of the operator's path to improve workflow and reduce burn risk in compact spaces.
