The Unox XEBL-16EU-YPRS Bakertop MIND.Maps PLUS is a 16-tray electric combi oven purpose-built for high-volume pastry shops, bakeries, and professional kitchens requiring exceptional baking uniformity and cooking versatility. Accepting 600 x 400 mm baker's trays on an 80 mm pitch, this trolley-loaded oven handles fresh and frozen baking as well as a full range of gastronomy processes including steaming, roasting, grilling, sous vide, dehydrating, pan frying, low-temperature cooking, and plated regeneration. Italian-engineered by Unox, it combines Intensive Cooking and Intelligence Performance technologies to deliver repeatable, precise results regardless of load size.
At the heart of the oven is the MIND.Maps PLUS control platform, featuring a 9.5-inch touch panel with over 1,000 programmable recipes and an intuitive visual language for building custom cooking programs directly on screen. ADAPTIVE.Cooking automatically adjusts time and temperature to suit varying loads, while CHEFUNOX allows even untrained staff to achieve consistent outcomes by selecting from a comprehensive cooking library. The oven ships complete with a QUICK.Load trolley, a specified water filtering system, two 1-litre double-concentrate DET&RINSE PLUS cleaning solutions, and a first installation kit, making it ready to perform from day one.
