Choosing between doors and drawers is partly a storage decision and partly an access decision. The right arrangement depends on the containers you use, how often they are reached for and the space available when the cabinet is open.
List the containers first
Measure the boxes, trays, bottles and pans that must fit inside. Record their height with lids fitted, not just their empty footprint. Group them by how often they are used during service.
Do not compare cabinet volume alone. Shelves, drawer runners and internal equipment affect the usable arrangement. Ask for internal dimensions and supported pan configurations for each specific model.
Draw the open position
Add the full drawer extension or door swing to the floor plan. Check the relationship to the opposite bench, passing staff and any nearby appliance doors. A cabinet that fits the closed opening can still be inconvenient when someone needs to retrieve an item.
Use a simple taped floor outline to discuss movement with the team. Keep manufacturer-required installation clearances separate from the working aisle your venue needs; both must be addressed in the final layout.
Compare the retrieval task
Drawers may make certain organised pan layouts easier to view, while a door cabinet may suit a different mix of taller containers. Neither option wins automatically. Test the actual items rather than relying on a general preference.
Ask whether the drawer arrangement is adjustable and what accessories are included. For a door cabinet, check shelf adjustment and whether the largest container can be removed without disturbing everything around it.
Include the restocking routine
Service access and restocking are different tasks. Consider how deliveries or prepared containers reach the unit, how the contents are organised and how staff identify what they need. A configuration that looks tidy when empty may become awkward once the normal stock mix is loaded.
Also check the access required for cleaning and maintenance in the manufacturer’s instructions. Do not design cabinetry that blocks a grille or service panel simply to achieve a flush appearance.
Compare exact configurations
On each quotation, record the door/drawer arrangement, usable internal dimensions, compatible containers, external dimensions, open clearance and installation requirements. Confirm the actual supplied configuration rather than ordering from a representative photograph.
